• 2 handfuls basil
  • 1 cup olive oil


Place two generous handfuls of basil in your blender, add one cup olive oil, and blend until smooth. This will not keep vibrant green for very long. If you want to make LESS, use a handheld blender and place ½ cup oil and 1 handful of basil in a quart container and blend until smooth.
To serve, reheat the blended soup, stir in the mushrooms. Ladle into bowls and drizzle the basil oil on top.
